About the Coffee
In our ongoing search for standout Colombian coffees that push flavor into new territory, our partnership with In Conexus continues to deliver remarkable results. Their focus on collaborating directly with small growers and quality-driven groups across Colombia gives us access to some of the most expressive and meticulously produced coffees in the country.
Filadelfia Honey comes from the Huila region and is one of those rare coffees that instantly captured our attention—much like the Pink Bourbon honey lot from La Muralla we sourced last year. This lot combines a highly disciplined honey anaerobic process with the already vibrant character of Pink Bourbon, resulting in a cup that is deeply modern, aromatic, and intensely sweet.
The honey anaerobic fermentation brings a layered complexity: the rich, fruit-forward character often associated with natural processing, paired with the clarity and structure we love from washed coffees. The result is a flavor profile that bursts with candied and cooked apple, lifted by bright acidity and an almost perfumed aromatic quality. It’s an experience that is both playful and refined—exactly what we look for when selecting Pink Bourbon coffees for our menu.
