About the Coffee
The San AgustÃn Management Hub derives its name from the twelve farms in the region, which, due to their proximity, share similar soil characteristics and favorable climatic conditions. This natural synergy enables them to be recognized collectively by InConexus as a management hub—a central farm that facilitates knowledge sharing and management focusing on sustainability and innovation, thereby optimizing pre-harvest and post-harvest processes.
The hub's primary objective is to create shared value through a reciprocal exchange between the extension team at InConexus and the coffee growers. By meticulously profiling the strengths and weaknesses of the central farm, InConexus can provide targeted training and structural support, transforming it into a benchmark for sensory profiles. This approach enhances the consistency of flavor profiles and increases production volume.
Edison Mamiam, a fourth-generation coffee farmer and representative of the San AgustÃn Hub, hails from a family renowned for discovering the Pink Bourbon of San Adolfo. Despite facing numerous challenges within the coffee industry, Edison's resilience and expertise have enabled him to thrive. His farm, known for its prized varietals used in seed propagation, blends ancestral wisdom with innovative practices, ensuring the enduring legacy of his community's coffee production.
Discovering the Coffee
In our continued quest for distinctive Colombian coffees to elevate our menu, we once again turned to our partners at In Conexus for some unique offerings. For this, Nick and I flew out to Chicago to join our first-ever Specialty Coffee Association event, where over 15,000 coffee enthusiasts gathered to explore the hundreds of exhibitors. The event is a bit overwhelming as you have everything from coffee producers to equipment manufacturers, coffee roasters, and more on the event floor. Luckily, Nick and I went in on a mission to visit a few of our favorite producers to see if they had any hidden gems worth tasting.
In Conexus brought some fantastic coffees all highlighting the complexity and diversity of Colombian coffees. We were stunned by two coffees; the first, rightfully named Fruit Loops, was a washed Gesha varietal that took you right back to childhood as if you were eating a bowl of Froot Loops cereal. This profile itself is super clean, sweet, and distinctively fruity, and when roasted, light makes for a bright and fun coffee for the summer. This coffee will make a fantastic pour-over and a super fun and bright iced coffee.
