About This Coffee
This Black Honey lot is driven by innovation and precision fermentation. Andres developed a blackberry “mosto” using fresh fruit and enology yeast, fermenting it anaerobically before introducing the coffee.
The coffee then co-ferments with the mosto, building deep fruit intensity and tannic structure before being lightly washed for clarity. The result is a bold, layered cup with both sweetness and structure—ideal for espresso and full-bodied brews.

From a 12-year-old coffee worker to a processing innovator, Andres Cardona has transformed his farm into a hub for quality and education within his community.
After studying specialty coffee in 2018, Andres began experimenting with fermentation and processing techniques. Today, he not only produces exceptional coffees but also buys cherries from neighboring farmers—processing them with carefully designed protocols to elevate quality across the region.

Yes, we currently roast all orders twice a week (Tuesday and Saturday).
